Easy Peasy Walkers Shortbread Mini Lemon Cheesecakes

These mini lemon cheesecakes are a quick & easy treat with our exclusive Walkers Shortbread Recipe and are sure to show her just how much you care.


  • Walker’s Shortbread
  • 180ml double cream
  • 360g cream cheese
  • 1tsp vanilla extract
  • 85g powdered sugar
  • Zest of 1 lemon
  • 9 thin lemon slices

Follow this simple to follow 5 step guide to making these scrummy treats…

Be warned though, you’ll wish you made a double batch!!!

Step 1
Add the double cream, cream cheese, vanilla extract, icing sugar and lemon zest into a bowl and mix together until smooth and thick.

Step 2
Place Walker’s Shortbread on a tray. Carefully place mixture on top of shortbread.

Step 3
Decorate with lemon slices.

Step 4
Place in fridge to set.

Step 5
Enjoy the fresh, sharp, yummyness
and try to stop at 1… if you can?!
